The Promis is sourced from vineyards across Bolgheri and Bibbona with the majority in Bibbona on only dark soils rich in clay. The three varieties are fermented separately over 2 to 3 weeks. All varieties retain approximately 15-20% whole-bunch in the ferment and are then aged in a mixture of Tonneau and Barrique for 12 months.
