This meant they were whole bunch-pressed separately, and juice was spontaneously fermented in respective stainless-steel tanks, with the help of temperature control to retain pristine aromatics. At around midway through, fermenting juices were transferred to French oak barrels (79% seasoned, 21% new) where young wines remained for a year, with full malolactic fermentation taking place, accompanied by occasional gentle lees stirring.
