Harvested on April 6th, the whole bunches underwent a gentle foot trod before a prolonged press directly into barrel. The entire volume was housed in two large Taransaud casks—one new demi-muid and one five-year-old puncheon dedicated exclusively to this vineyard’s fruit since its inception. A wild fermentation occurred naturally, continuing over the year. After 14 months, the wines were moved to stainless steel while still fermenting a small amount of residual sugar. An additional 12 months in stainless ensured complete dryness and stability, followed by gravity racking and sulphur adjustments to prepare for bottling.
