As the rye bread note moves into Brazil nuts and ground nutmeg, the earthy, slightly funky (and much loved) corners of complexity found within Sullivans Cove spirit character begin to open up – brine, chicken phở broth and musk. The texture is soft and waxy, and the spirit is bright, full-bodied, and boasting incredible depth of flavour. As the palate opens, further notes of buttered pastries (the really good butter), sweet ginger and fresh apple juice move together in a dance between depth and brightness.
